Chicken Parmiagiana - Grace Style
>Ingredients
Large chicken fillets cut thinly
Bread crumbs or a crumbing mix
Diced bacon
Basil
Crushed Garlic
Approx 1 cup grated cheese
Your favourite thick tomato sauce
Method:
Crumb chicken breasts
Lightly brown in a hot fry pan
Remove from frying pan and place on baking paper on a baking tray
Smooth a generous portion of tomato paste on the top of the chicken breasts (to taste)
Cover with bacon pieces, herbs, garlic and grated cheese
Place in the oven and cook until cheese is melted and breadcrumbs are brown (approx 15-20 minutes)
